Busy Day Quiche Recipe

We have busy weeks around here, and yet dinner still happens every day and needs a plan! This quiche took me only 12 minutes to put together, as I did use a prepared Pillsbury pie crust and just had to add ingredients and pop in the oven. It does take a while to bake, but that time was easily used catching up on other things while we waited for dinner to be ready. It felt good and tasted great to have quiche tonight instead of our normal busy night, "no plans, what to do plan". That is just no fun when people are hungry! :)


1 prepared flour pie crust, or make your own
4 eggs
1 cup milk
1 cup blanched broccoli florets (microwave for 2 minutes covered with a bit of water)
1 cup sliced mushrooms
1/3 cup diced onion
2/3 cups diced ham
1 cup shredded cheese
salt and pepper to taste


Place pie crust into a 9" deep dish pie plate, cover bottom with 1/2 cup shredded cheese. Layer ham, mushrooms, onions and broccoli on top. Whisk milk and eggs, pour over pie and level. Add salt and pepper to taste. Cover with the remaining 1/2 cup shredded cheese.

Bake at 350° for about 45 minutes, until crust and cheese are lightly brown and pie is firm.
